A natural performer on camera, Bugialli was an early adopter of television. For years he hosted a weekly program on RAI, the Italian public network, and then released a bestseller collection of cooking videos for VideoCraft. His latest project is a 26-part series on regional cuisine, distributed by PBS.

BACKGROUND TRIVIA !!!
The range of specialized cooking tools developed by Italian Reinassance chefs, and carefully documented by 16th and 17th century manuals, is simply astonishing. The three utensils reproduced in the background of this page were used in the preparation of "crespelle," the Italian version of crêpes, and "cialde", which are thin wafers rolled and baked to scoop up fresh whipped cream.
The drawing includes (from the top of the page down) a "soffietto" or bellows, a special implement to make "cialde," and a "setaccio" or sieve. It is interesting to notice how little the shape and function of these tools has changed over time: they are still commonly used in Italian kitchens today. More trivia?
